Ginger-Pear Chicken Thighs
1 onion, chopped
8 chicken thighs
4 cups pears, sliced and skinned
1 cup pear juice
2 cloves garlic, grated
1 tsp. fresh ginger, grated
4 tbsp. olive oil
1 tsp. sea salt
½ tsp. white pepper
1 ⁄ 8 tsp. saffron
1 In a pot, heat oil and sauté onion and garlic until golden brown. Add ginger, pears, saffron, salt, and pepper to onion mixture and sauté for a couple of mi nutes.
2 Remove the skin and wash chicken thighs. With a sharp knife, make a couple of cuts on each thigh.
3 Preheat the oven to 350° F. Grease an oven dish and arrange chicken thighs on the dish. Pour pear juice over chicken thighs and cover the dish with a foil. Cook on the top rack for 20 minutes, and then turn the chicken thighs on the other side and cover them with the pear mixture. Remove the foil, and cook for another 10 mi nutes.
4 You can serve this dish with vegetables or over basmati rice.
